Sweet Potato Casserole

this recipe is one to store away and save forever. it's perfect for thanksgiving and christmas but equally amazing as a side dish for dinner (and hopefully left overs) or to bring to a potluck (which is what i did). this casserole is comfort food at its finest, super easy to make and a crowd pleaser. 

Ingredients 
Casserole:
2-3 lb sweet potatoes, cooked
2 eggs, slightly beaten 
1/3 cup evaporated milk
1 stick butter, melted 
1/2-3/4 cup sugar (add more or less depending on how sweet you want your casserole, i used 3/4 cup)
1 tsp vanilla

Topping: 
1/3 cup flour
1/3 cup butter, melted
1 cup pecans, chopped
1 cup brown sugar 

Directions
peel and boil sweet potatoes until soft. strain and mash. 
in a separate bowl, mix together eggs, evaporated milk, 1 stick melted butter, sugar and vanilla until well combined. add mixture to mashed sweet potatoes and mix until smooth. 

once combined, pour sweet potato mixture into a casserole dish. 
 in another bowl (sorry, lots of bowls), combine topping ingredients (flour, 1/3 cup melted butter, pecans and brown sugar). mix until well combined and crumbly.  
 spread pecan mixture evenly over sweet potato mixture. 
 bake at 325 degrees for 45 minutes and enjoy this bubbly, sweet goodness.
