a peak inside my refrigerator

happy tuesday! i'm so excited it's tuesday because i have the next week off from work and boy have i been looking forward to this. plus, i'm feeling super motivated today... it's before noon and i've already gone to crossfit, cleaned almost my entire house, done multiple loads of laundry, and dropped our three dogs off at the groomers. the pups have been shedding so much lately (not sure why because it's the middle of winter still) and were in desperate need of a bath.. so picture this.. me dressed in ben's enormous camouflage sweatshirt, a parking lot covered in a layer of ice, trying to hold on to approximately 300 pounds of dog as they are pulling like wild animals.. meanwhile i'm doing everything in my limited power to not slip and fall on my head.. not pretty. but i survived.

with the new year, so many people are trying to make healthy diet changes and i figured i'd share what my fridge typically looks like after i stock up for the week and how i go about meal planning. 

before i head to the grocery store i usually have a few meals in mind i plan to make during the week but otherwise i have zero plan. since i tend to have limited time for cooking, i buy a few packages of meats that are easy to cook (lot of ground turkey, sausage, sometimes ground beef, chicken, fish). i also go through cycles of vegetables i'm in the mood for and load up on them (kale, broccoli, cauliflower, tomatoes, brussel sprouts) with some fruit (clementines, strawberries, blueberries). i try to avoid eating too much fruit because of all the sugar and i'd prefer to eat my sugar in the form of chocolate (see below). i always have some sort of cheese to occasionally add to meals (cheddar, goat or mozzarella), yogurt (i've been loving green mountain creamery's maple greek yogurt - it's only sweetened with maple syrup where the rest of their fruit flavors have added sugar), paleo granola, gluten free oatmeal and eggs. 

i typically cook meals for about three days at a time... things just don't taste very good to me after that and i'm sick of eating whatever it is. this past sunday i cooked up italian chicken sausage, breakfast chicken sausage, and ground sirloin with ground turkey and scallops still uncooked for later.

for vegetables i sauteed two bunches of kale (clearly with lots left over for the rest of the week), roasted brussel sprouts in the oven with olive oil and salt, baked sweet potato fries (pre-cut from whole foods) and then have lots of arugula, tomatoes, cucumbers and lemon juice to make easy salads. 

since all my food is typically pre-cooked, i quickly pack different combinations of each thing into tupperwares for work. so easy!  


whole foods is probably my favorite store.. i could seriously spend hours wandering through every aisle reading labels and searching for new foods to try. this week i found another brand of paleo chocolate that is amazing and comes in multiple different flavors. this hazelnut butter chocolate is so yummy and a piece is the perfect treat after a meal (since i don't think i'll ever be able to completely get rid of my sweet tooth).
